Directions
- Place the rice in a fine-mesh strainer and rinse it under cold water until the water runs clear. This removes excess starch and prevents the pudding from becoming too thick.
- In a medium-sized saucepan, combine the rinsed rice and rice milk. Bring the mixture to a gentle boil over medium heat, stirring occasionally to prevent the rice from sticking to the bottom of the pot.
- Once the mixture reaches a boil, reduce the heat to low and let it simmer uncovered. Stir occasionally to ensure the rice cooks evenly and doesn't stick to the bottom of the pan.
- Sweeten (Optional): After about 20 minutes of cooking, when the rice is tender and the mixture has thickened, stir in the maple syrup, honey, or stevia (if using), vanilla extract, and a pinch of salt. Continue to cook for an additional 5-10 minutes until the pudding reaches your desired consistency.
