Directions
- In a small saucepan, bring 1/2 cup of water to a boil.
- Remove from heat and add the couscous. Let it sit covered for about 5 minutes, allowing the couscous to absorb the liquid and soften.
- Steam the apple and pumpkin into a steamer basket or a rice cooker. Blend when ready.
- In a mixing bowl, stir the couscous, apple, and pumpkin.
- Serve with cinnamon sprinkle and/or steamed apple cubes.
- You can also refrigerate for up to 2 days.
