Ingredients

  • A medium zucchini

  • 5 large eggs

  • A cup of flour

  • Half a cup of shredded cheddar cheese

  • 1 tsp of baking powder

  • ½ tsp salt and 1/s tsp of onion powder

Directions

  • Preheat the oven and coat the 8×8 pan with some nonstick cooking spray and use parchment paper.
  • Now, you can cut the zucchini stems and grate them with a box grater. Add the result to a kitchen towel, squeeze the liquid, and discard it. You should have a cup of grated zucchini at this time.
  • Once you have that, you add it in a medium bowl with all the other ingredients. Stir and ensure that you have a uniform batter. Pour that into the baking pan; you will need around 25 to 30 minutes here.
