1 Ripe banana
2 Eggs
2 Tsps coconut flour
1/s Tsp Cinnamon/Vanilla Extract
Coconut oil/butter/oil needed for greasing

- Mash the banana with a fork in your mixing bowl. You can use a mixer, but since it’s just a single banana, manual mashing is usually more than enough.
- Now, you need to whisk the eggs; after that, you can add the mashed banana, coconut flour and cinnamon.
- Mix everything until you see it’s all combined.
- In the meantime, heat the frying pan to medium heat, add the coconut oil or butter.
- Make sure that you drop some spoonfuls of your mix into the pan. Cooking time should be 3 minutes.
- Flip and then cook for 3 more minutes. You can stop until the pancakes are golden on both sides.
